July class: Steamed Fish

Please prepare these ingredients before class, you can also use the ingredients you have in the fridge or replace them for their flavor.

Steamed Fish is a timeless Cantonese classic found in seafood restaurants and home kitchens alike. A perfectly cooked fish is topped with fresh aromatics and drenched in a sweet, savory, and umami-rich seasoned soy sauce.

    The Fish & Aromatics

    • 1 whole white fish or fillet (about 500-600g) (e.g., Sea Bass, Tilapia, Snapper, or Barramundi), scaled and gutted

    • 2 x 2-inch piece of fresh ginger, peeled and cut into very thin matchsticks (julienned)

    • 1 stalk green scallions, cut into 3-inch lengths and thinly sliced lengthwise into fine threads

    • 2 tbsp Shaoxing rice wine (optional, for rinsing)

    • 2 tbsp neutral cooking oil (with a high smoke point, like peanut, canola, or corn oil)

    • A few sprigs of fresh coriander (cilantro), for garnish

    The Seasoned Soy Sauce

    • 3 tbsp light soy sauce

    • ½ tsp dark soy sauce (mainly for a deep, rich colour)

    • ½ cup hot water (or low-sodium chicken stock)

    • 1 tsp sugar

    • ½ tsp white pepper powder

    • 1 tbsp sesame oil
